Pasta al pesto

Liguria's simplest pleasure, and the dish we judge our kitchen by. Sweet basil pounded with pine nuts, garlic and aged Parmigiano, loosened with a spoonful of pasta water and folded through hot pasta until every strand is coated.

Beef Cheek Tagliatelle

A traditional favorite kept simple and incredibly honest. Beef cheeks braised slowly in red wine with soffritto until they give way under a fork, folded into a glossy ragù and spooned over fine hand-rolled ribbons of egg tagliatelle.
